Roasted Veggie Chickpea and Avo Salad: (serves 2)

Chop and Roast veggies for 15 minutes on 180 degrees:

  • 3 baby marrows
  • 1 Onion
  • 3 Patty Pans
  • 3 Whole garlic cloves

Season with chilli flakes, the tiniest drizzle of olive oil and a fresh squeeze of lemon

Add the below ingredients freshly chopped to complete the dish:

  • 8 baby tomatoes
  • 1/4 cucumber
  • 1/2 round feta cheese
  • 1/2 avocado
  • 1 tin chickpeas

Toss and Serve. Delicious, quick and easy!
