Ingredients:

For the Coleslaw

  • 3 cups red cabbage, thinely sliced
  • 3-4 baby marrows, grated
  • 3-4 carrots, grated
  • 3 spring onions, thinely sliced
  • 1 apple, grated
  • 1 cup fresh coriander, chopped
  • 1/3 – 1/2 cup toasted cashews, sunflower and pumpkin seeds
  • 2 tbsp raisins or goji berries

 

For the thai-style sauce

  • 1 red pepper
  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/2 – 1 tsp. chilli flakes or paprika
  • 1-2 tbsp. lemon juice
  • 3 tbsp. lite soya sauce
  • 1 tbsp honey
  • 1-2 tbsp. apple cider vinegar
  • 1 tsp crushed garlic
  • 2cm fresh ginger, grated
  • 1 tps. curry powder
  • 1/2 cup fresh coriander

 

Method:

  1. Add all the ingredients(except the seed mixture) for the coleslaw into a big bowl.
  2. For the sauce – add all ingredients to your blender or Nutribullet and blend.
  3. Pour the sauce over the coleslaw and mix well
  4. Top with the toasted seeds.
