- Low GI bread
- Woolies ready to eat chicken fillet / left over chicken (1 small breast)
- Baby spinach
- Lemon juice
- ¼ avo
- Toast your slice of bread.
- Top your toast with sliced chicken breast, cucumber ribbons, baby spinach rocket and basil.
- Mix some plain yoghurt, tsp .of pesto and some lemon juice and drizzle over your sandwich.
- Serve with avo slices on the side.
